Avocad-Yo! A tasty twist on avocado

Avocado: a delicious, summertime favorite rich in antioxidants, this healthy fat has graced everything from toast to salads. But have you ever used it in frozen yogurt? Here’s a simple, easy recipe for avocado fro-yo that’ll have you running to the Market daily! (Bonus: you can get three avocados for $5 this week only in our produce department!)
 
Avocad-Yo! Frozen Dessert
 
16 oz plain Greek or Icelandic yogurt
2 tbsp honey, or to taste
1 avocado, with pit and skin removed
1 vanilla bean

 
1. Add yogurt, avocado, and honey to blender. Slice vanilla bean in half and use knife to remove seeds and add into the blender
2. Blend until smooth and no lumps are visible
3. Pour into freezer safe container and let sit for 3 hours, or until completely frozen
4. Scoop and enjoy!
 
While this particular flavor is delightful on its own, adding a few toppings takes it to the next level! Our favorite combos include:
Pomegranate seeds and shredded coconut
Mini dark chocolate chips
Sweet red cherries & black sesame seeds
Walnuts and cinnamon
Cinnamon-sugar and pumpkin seeds
