Over the years, salad has evolved from a side dish to a main course. Here are a few helpful ideas for turning your usual romaine and carrot side plate into a filling meal-time entrée.
Goat Cheese and Sweet Potatoes
On a bed of baby kale, add your favorite goat cheese, crumbled, and roasted sweet potatoes, cooled to warm. Top with sunflower seeds and a dijon-sage dressing. Bonus, add a sunny side up egg for extra protein!
Chips & Chili
Starting with hearty romaine, take half a cup of leftover homemade chili, heating optional, and pour over the lettuce. Top with crumbled tortilla chips, hot sauce, avocado and your favorite cheese. No need for dressing!
A Hearty Cobb
Start with a mix of romaine, spinach, and arugula. Layer your ingredients on top, beginning with rich gorgonzola, then adding thick cut bacon (cooked and crumbled), grilled chicken of your choice, hardboiled eggs soaked in beet juice for extra color, shredded carrots, heirloom tomatoes, and green peppers. Our dressing choice would be our Marketmade champagne vinaigrette. Don’t forget to add a sprinkle of pepper!
Crowd-Pleasing Pepper Pasta
Instead of the usual greens, cook up your favorite pasta, or use our freshly made pastas as the base. Boil pasta to al dente, then mix in green, red, and yellow bell peppers, chopped, along with fresh mozzarella, cherry tomatoes, and red onions. For added oomph, mix in grilled chicken breast seasoned with oregano. To finish it off, mix in your favorite Italian dressing for a classic patio party favorite.
