Simply Made for Weeknight Grilling
 
Firing up the grill doesn’t always need to be a weekend adventure. No matter the grill type, a few simple ingredients can make grilling a quick and easy way to add a character to your weeknight meal. Here is a recipe for a delicious and filling meal your family will love!
 
Balsamic Eggplant Rollups
 
2-3 eggplants, sliced to about a 1/4 in long ways
2 cups ricotta
1 egg
1/2 cup parmesan cheese
1/4 cup fresh basil, julienned
Pinch of sea salt
Pinch of fresh ground black pepper
Casserole dish

 
For oil:
1 tbsp balsamic vinegar
2 tbsp olive oil
1 tsp red pepper flakes
Pinch of sea salt
Pinch of fresh ground pepper
 
1. Take eggplant slices and salt both sides. Let sweat for 20 minutes, than blot with a towel until dry.
2. Start the grill. Mix together oil ingredients and brush onto eggplant slices. Once grill is hot, add eggplant and cook for about 2-3 minutes on both sides, or until slightly soft. Remove to plate. *Note that eggplant should be cooked most of the way and have nice char marks on each side.
3. Mix together egg, ricotta, basil, salt, pepper and parmesan. Spread onto eggplant slices and roll up. Add to casserole dish and cover with foil. Cook on hot grill, around 400 degrees, for 25 minutes, or until roll ups are bubbly and delicious! Serve hot.
