How To Cook a Pork Roast
Preparation
Equipment: Plastic wrap, roasting or cake pan, meat thermometer
- If the roast is not brined, season the outside with 3 parts salt to 1 part sugar and 1 part fresh herbs the night before, wrap it in plastic, and refrigerate overnight.
- Allow the roast to come to room temperature, preheat the oven to 475°F.
- Place the pork in a roasting or cake pan, and sear in oven for 10-15 minutes, until the outside is nicely browned.
- Reduce the oven heat to 300°F and cook until a meat thermometer reads 145°F internally for a juicy and tender pork roast (160°F for a more severely cooked roast).
