The Cave Aging Program (affinage) at Standard Market is one is one of only a small handful of independent cheese aging operations in the U.S., although the model is popular in Europe. We partner with small, primarily Midwestern cheesemakers and age the cheese in our temperature- and humidity-controlled aging rooms in our Markets. We age cheese that we sell at our Cheese Shop and also work with cheesemakers to develop new/unique cheeses for us.
